برخی از جنبه های کاربردی نانو مواد تجدیدپذیر در بسته بندی مواد غذایی

چکیده

استفاده بی­رویه از فیلم­ های بسته­ بندی پلاستیکی و ایجاد مشکلات زیست محیطی موجب توسعه استفاده از بسته ­بندی­ های زیست تخریب­ پذیر شده است. این مواد اساساً از مواد خام کشاورزی (سلولز، نشاسته و پروتئین) یا ضایعات صنایع فرآوری مواد غذایی دریایی (کیتین/کیتوزان) مشتق می­ شوند. اگر چه مشکلاتی مثل خواص مکانیکی و ممانعت­ کنندگی ضعیف دارند؛ اما از فنّاوری نانوکامپوزیت­ ها تا حد زیادی این مشکلات برطرف شده است. نانو کامپوزیت­ ها همچنین نقش­ های دیگری مثل فعالیت ضد­میکروبی، تثبیت آنزیمی، حسگرهای زیستی و ... دارند. در این مقاله برخی از جنبه­ های کاربردی بالقوه کیتوزان، زانتان و لیگنین در به دست آوردن بسته­ بندی ضد­میکروبی و آنتی ­اکسیدانی ارائه شده است. یکی از روش ­های کاربرد کیتوزان، استفاده از آن در هیدروژل ­ها می ­باشد. بر این اساس، شبکه ­ای بر پایه هیدروژل­ های کیتوزان با اتصالات عرضی کووالانسی ایجاد می ­شود. ایجاد اتصال عرضی با پیوند کووالانسی منجر به تشکیل یک شبکه دائمی می ­شود که موجب رهایش دارو با انتشار کنترل شده و افزایش خواص مکانیکی هیدروژل می­ شود. مطابق با نتایج ارائه شده، انتشار آرومای وانیلین از هیدروژل­ های نانوکامپوزیت کیتوزان و هیدروژل­های لیگنین- زانتان با تأخیر صورت می­ گیرد. همچنین در مطالعات انجام شده بر روی لیگنین مشخص شده که نقش لیگنین به عنوان عامل ضد­میکروبی و آنتی­اکسیدان در ترکیب پلی­اولفین وابسته به نوع لیگنین و خصوصیات آن است.
