کاربردهای نوین بسته بندی های خوراکی برای میوه ها و سبزی های تازه و قابلیت های آنها به عنوان حامل مواد فعال

چکیده

میوه­ها و سبزی­های تازه، قسمت اصلی یک رژیم غذایی سالم را تشکیل می­دهند. نگهداری میوه­ها و سبزی­های تازه با کیفیت بالا برای مدّت طولانی کار پیچیده­ای است. در سال­های اخیر، گروه­های پژوهشی، بسته­بندی خوراکی را به عنوان جایگزین مناسبی برای روش­های بسته­بندی سنتی مورد تأیید قرار داده­اند. در این مقاله مروری، فیلم­ها و پوشش­های خوراکی و کاربردهای جدید آنها به عنوان بسته­بندی­های خوراکی برای میوه­ها و سبزی­های تازه بررسی می­شود. همچنین، این مقاله، قابلیت فیلم­ها و پوشش­های خوراکی را به عنوان حامل مواد فعال، مورد بحث قرار می­دهد. اضافه نمودن برخی از مواد افزودنی یا ترکیبات فعال مانند: مواد ضد­میکروبی، بهبود­دهنده­های بافت، مواد ضد­قهوه­ای شدن، مواد رنگ دهنده، بهبود­دهنده­های عطر و طعم، مواد ضد اکسیدان و مواد مغذّی به فیلم­ها و پوشش­های خوراکی می­تواند موجب ثبات در برابر میکروب­ها ، حفظ کیفیت حسی و ارزش تغذیه­ای میوه­ها و سبزی­های پوشش داده شده گردد.
