چکیده
میوهها و سبزیهای تازه، قسمت اصلی یک رژیم غذایی سالم را تشکیل میدهند. نگهداری میوهها و سبزیهای تازه با کیفیت بالا برای مدّت طولانی کار پیچیدهای است. در سالهای اخیر، گروههای پژوهشی، بستهبندی خوراکی را به عنوان جایگزین مناسبی برای روشهای بستهبندی سنتی مورد تأیید قرار دادهاند. در این مقاله مروری، فیلمها و پوششهای خوراکی و کاربردهای جدید آنها به عنوان بستهبندیهای خوراکی برای میوهها و سبزیهای تازه بررسی میشود. همچنین، این مقاله، قابلیت فیلمها و پوششهای خوراکی را به عنوان حامل مواد فعال، مورد بحث قرار میدهد. اضافه نمودن برخی از مواد افزودنی یا ترکیبات فعال مانند: مواد ضدمیکروبی، بهبوددهندههای بافت، مواد ضدقهوهای شدن، مواد رنگ دهنده، بهبوددهندههای عطر و طعم، مواد ضد اکسیدان و مواد مغذّی به فیلمها و پوششهای خوراکی میتواند موجب ثبات در برابر میکروبها ، حفظ کیفیت حسی و ارزش تغذیهای میوهها و سبزیهای پوشش داده شده گردد.
