سیر تحول بسته‌بندی به روش اتمسفر اصلاح‌شده

چکیده

بسته‌بندی با اتمسفر اصلاح‌شده (MAP) روشی است که در آن تغییر هدفمند ترکیب اتمسفر موجود در بسته‌بندی موجب افزایش ماندگاری محصول شده و به این صورت امکان حصول اطمینان از کیفیت ماده غذایی در طول مدت نگهداری  فراهم می‌شود. مزایا و اهمیت استفاده از بسته‌بندی با اتمسفر اصلاح‌شده برای بسیاری از محصولات، چه در سطح آزمایشگاهی و چه در شرایط تولید صنعتی نشان داده‌شده است. این مقاله، مروری بر سیر تحول بسته‌بندیMAP، از جمله MAP فعال، MAP غیرفعال،MAP منفذدار و همچنین تاثیر استفاده از ترکیب گازهای مختلف را ارائه می‌دهد. بسته‌بندیMAP فعال به صورت تغییر محتوای اتمسفر حین بسته‌بندی و بسته‌بندی غیر فعال به صورت تغییر ترکیب اتمسفر بسته‌بندی بر اثر تنفس و یا تبادل گاز میان بسته‌بندی و محیط است. MAP منفذداریک رویکرد ترکیبی است که امکان تبادل گازها بین محصول و محیط را فراهم می کند. این مقاله همچنین اثرات مخلوط گازهای مختلف بر کیفیت و ایمنی محصول و همچنین اهمیت انتخاب مواد بسته‌بندی مناسب برای هر کاربرد را مورد بحث قرار داده و دیدگاهی ارزشمند در مورد گزینه‌های مختلف موجود برای بسته‌بندیMAP را ارائه می‌دهد تا امکان اتخاذ تصمیمات آگاهانه‌‌ برای بهینه‌سازی کیفیت و ماندگاری محصولات فراهم شود.

چکیده [English]

Modified atmosphere packaging (MAP) is a technique that alters the air composition inside packaging to extend the shelf life of products, preserving their quality during storage. MAP has proven to be beneficial and significant for various products, both in laboratory and industrial settings. This article presents an overview of MAP packaging types and their evolution, including active, passive, and porous MAP, as well as the use of diverse gas combinations. Active MAP changes the atmosphere content during packaging while passive MAP alters the packaging atmosphere's composition through breathing or gas exchange with the environment. Porous MAP is a hybrid approach that allows gas exchange between the product and the environment. Furthermore, this article discusses the impact of different gas mixtures on product quality and safety, emphasizes the importance of selecting appropriate packaging materials for each application, and offers valuable insights into MAP packaging options, enabling informed decisions to optimize quality and ensure product longevity.
