Eggs have long been recognized as a vital food source due to their low cost, high protein content, essential amino acids, fat-soluble vitamins, and excellent digestibility, making them an indispensable component of the global human diet. Despite the natural protective role of the eggshell, its micropores allow the gradual escape of carbon dioxide and water vapor, leading to weight loss and rapid internal quality deterioration. This study investigated the effect of a combined coating of colophony and coconut oil as an edible and antimicrobial coating on preserving the physical, chemical, and microbiological quality of eggs during 4 weeks of storage at ambient temperature. The alcoholic coating solutions were prepared according to the L16 experimental design (Taguchi method) with three factors: colophony concentration, coconut oil concentration, and storage time. Fresh eggs were coated by prepared solution, with five replications. Evaluated parameters included weight loss, Haugh unit, and yolk index. ANOVA results indicated that coconut oil concentration had the greatest contribution to reducing weight loss, followed by storage time and colophony concentration. The optimal composition for minimizing egg weight loss was 2% colophony and 4% coconut oil. The results also showed that storage time had the greatest impact on Haugh unit, and the highest Haugh unit was achieved with 4% colophony and 4% coconut oil. Coconut oil was the only factor that had a significant effect on yolk index, with the best value obtained at 4%. Microbial assessments demonstrated that the rosin-coconut oil coating significantly reduced shell microbial load and effectively inhibited aerobic bacterial growth even after 20 days.
